Extra day!

Today on the extra day of the year we got our first real taste of winter. It's about time! I love the first pretty storm of the year. Where I live we usually get a couple good snow storms a season.

Wasn't sure if we would see any snow this year with the unseasonably warm weather we have had. Thankful that it finally came! =)

Does anyone do anything special for this day that comes once every 4 years? I don't normally.
I should change that!

Mardi Gras.

I totally forgot to hit publish on this post earlier this week. ha.

This was last weekend: Mardi Gras Weekend!

I drank, ate, walked in the mardi gras parade with Relay for Life, celebrated Anthony's uncles bday, and needed more sleep. =)

What a great time!

On my bucket list: To spend Mardi Gras in New Orleans! If i had fun celebrating it in California then I can only imagine of the crazy fun time I would have there! Next year? =)

On the agenda for this weekend:

-margaritas and a little pool with a few friends

-baby shower

-spending a night with my sister and friends! Girls night!

-watching the Oscars!

Anthony is in San Diego this weekend but i made him fill out an Oscar ballot before he left! It's a fun tradition that we do! =)

I made an apple crisp last night for dessert. Sometimes i just get that urge to whip something up! Luckily i had all the ingredients on hand. =) And it was the perfect dessert for a cool (notice how i didn't say cold because it hasn't been at all) winter night.

What you need:

3-4 apples, sliced

3/4 cup packed brown sugar

1/2 cup flour
1/2 cup quick cook oats

1/3 cup butter, softened

1/2 tablespoon cinnamon

1/2 tablespoon nutmeg

big handful of chopped pecans

combine all the ingredients and pour over the apples.

bake @ 375 for 30-35 minutes until golden and the apples are soft.

Quick and easy. And please throw a scoop or two of ice cream on top............YUM!

I'm eating leftovers for lunch today. =)
